If your family is anything like mine, you’ll be eating Easter eggs for breakfast for the next month. From the traditional marshmallow kind, to Hot Cross Buns, to my personal fave, Speckled Eggs, we tend to go a bit balls to the wall with these festive goodies. 

Over the years, I’ve come up with some weird and wonderful ways to repurpose the old Easter egg. Admittedly, I tend to take decadence to a new level. But hey, if I’m not wasting, it’s for a good cause. Right? 

Here are three of my go-tos. 

*Disclaimer: I’m no chef, just a self-proclaimed snack queen with an insatiable sweet tooth. 

The Hot Cross Bun Toastie

Got a few spicy buns left over? Slice those babies in half, layer on a traditional marshmallow egg or two, close it up, and whack it in a toasting machine. The result: an ooey, gooey, melted marshmallow centre encased in a crispy, caramelised bun. This little number has me questioning the existence of a savoury sarmie. 

A Speckled Egg Pancake (or ten)

Everyone has their twist on a traditional pancake recipe. I’m not going to spark up the water-to-flour ratio debate here. What I do know for sure is that sprinkling a handful of choccie-coated, jelly delights over the top of a cooking pancake is pretty failproof. Think choc chip pancakes, but elevated. The different coloured eggs make for a rainbow treat that kiddies will love (yes, I did just indirectly admit that I’m a big kid). 

Hot Chocolate Heaven 

At this point, I’m sure you’ve gathered that I’m not great at light and refined when it comes to sweet treats. That being said, there’s no turning back now. Heat up your holiday with my take on Easter in a mug. For the love of all things good, no great hot chocolate was ever made in the microwave! On a stovetop, heat up your milk of choice (I love oat) with a tablespoon or two of your favourite cocoa blend. Believe it or not, I try to hold back on the sweetness of my chosen mix, because when things start boiling, I throw in a few leftover chocolate pieces, along with a marshmallow egg. Everything blends into a molten pot of goodness, with the marshmallow becoming soft and fluffy – best ever! 

If you’re all egged-out and even your sweet tooth has a cavity, perhaps it’s worth sharing some love. While I’m fortunate enough to be thinking of ways to deal with my chocolate avalanche, many spend festive holidays with nothing. Gather your leftover goods and take a drive through town. At almost every robot, street corner, or park, you’ll find a Capetonian to share your treats with. Dropping a box of Easter Eggs off at a shelter, orphanage, or old-age home is always a lekker idea as well.
