There’s nothing more satisfying that watching a delicious-looking meal being prepared (sometimes we try replicating the recipes too!). YouTube is a food lover’s haven of amazing inspiration and how-to videos, and now South Africa has their own internet cooking whizz, Claire Winstanley. Having honed her presenting skills on national television for many years, and her cooking skills for a lot longer than that, Claire launched her own YouTube channel called Good Looking & Cooking earlier this year.

It’s been so successful that we sent our editor to her kitchen for a crash course on how to make a proudly Capetonian treat – with a twist! Check it out below then scroll down for the full recipe.

MILK TART POPSICLES

Ingredients
• 3 free-range eggs
• 100g castor sugar
• 1 vanilla pod, scraped and seeded
• 3 cups full cream milk
• 2 tbsp cornflour
• Pinch of salt
• 2 tsp cinnamon, plus extra for garnish
• 1 cup crushed Tennis biscuits
• 1 tbsp cocoa powder
• 100g chocolate

Method
For the custard:
1 Whisk the eggs, sugar and vanilla until combined, then set aside.
2 Mix half a cup of milk with the corn flour and salt until smooth.
3 Whisk the milk mixture into the egg mixture, then set aside.
4 Pour the remaining milk into a pot and bring to just before boiling. Remove from the heat and slowly pour it into the egg mixture, whisking continuously.
5 Return the mixture to the heat, stirring continuously, until it cooks and thickens. Remove and set aside to cool.

For the popsicles:
1 Separate the custard into three jugs, setting one jug aside.
2 Add the cinnamon into one jug of custard, and the crushed biscuits and cocoa powder into another. Mix well then gently swirl the cinnamon custard into the last jug of custard.
3 Pour the cinnamon swirl custard into a popsicle maker, filling each popsicle mold 3/4 of the way. The add the crushed biscuit custard to the top. Place in the fridge and freeze for between 12 to 24 hours.
4 Melt the chocolate over a double boiler.
5 Remove the popsicles from the container, drizzle with melted chocolate and sprinkle with cinnamon to serve.
